[What's On The Menu?]: Memorial Day Edition

What’s summer without a nice barbecue, right? Well, to get the season started off properly and to celebrate this very special weekend, Pops and I pulled out the grill and cooked up a super-sized meal fit for a nice day in May. What was on the menu?

  • Barbecued Chicken
  • Barbecued Mahi Mahi
  • Barbecued Shrimp
  • Grilled Peppers
  • Browned Rice
  • My [special] Baked Beans
  • Steamed Vegetables

The temperature was perfect down here in Houston and our backyard patio turned into a private dining establishment for my parents and me. As young people today, it’s important to get in the kitchen (or the backyard) and cook a nice meal every once in a while. We’re starting our lives, which means we won’t have those parent-made home-cooked meals anymore. One of these weekends, get in the kitchen and make a meal for yourself (better yet, your entire family). It’s good practice and even a little fun. Happy Memorial Day.

[P.S. I added some jalapeno chips with mango salsa and a Caribbean Rum smoothie as the appetizer and beverage of choice. A meal fit for a young king and his family.]
